Recipes - Golden Chocolate Brownie Sundae

But that doesn't mean you have to pile on an extra ten pounds this holiday season! I need to share with you the recipe for this incredibly delicious dessert... which you could certainly indulge in over Christmas and as long as you're eating lots of veggies and fruits, salads, and well, just sensibly, you could have puddings like this every day!

There are three parts to this recipe... and it's called

Golden Chocolate Brownie Sundae


For the brownies...

In a food processor put:

2 cups mixed raw nuts of your choice
2 tbsp cacao powder
1 tsbp carob powder
1 tbsp lucuma powder
10 medjool/honey dates
a drizzle of honey/agave nectar (optional - should be sweet enough already!)
1/2 cup melted coconut oil and cacao butter blend
vanilla pod (scrape out the seeds (or a splash of vanilla extract)

Process thoroughly

Press into any shape you wish to - I like to make a block of brownie, about an inch high.

Pop in the freezer whilst you prepare your chocolate frosting!

Chocolate frosting:

Mix in a bowl 1 cup melted cacao butter/ coconut oil
1/2 cup nut butter
3 tbsp honey/agave/carob nectar
1 tbsp lucuma
1 tbsp cacao powder

Spread all your formed brownie mixture and then sprinkle edible gold dust on top. 

Set in the freezer or fridge

Cut into bite-sized pieces, ready for your sundae.

Now for the Chocolate Coconut Cream

In a blender add:

1/2 cup coconut cream (I used canned)
1/2 an avocado
1 banana
1 heaped tbsp cacao powder
1 tbsp lecithin
1 tbsp honey/sweetener of your choice
2 fresh dates (or two dates that have been soaked)

Blend to a cream and then pour into a container and leave in the fridge for an hour or overnight.

Assembly of the sundae...

In a lovely glass, scoop in two spoons of the cream

Arrange a spoonful of brownies

Drizzle some honey or maple syrup

Repeat this process and crush some walnuts on the top

This is a decadent treat... I had a very small glass for my sundae and it was SO good... sooooooo good! But really filling!
