This is an incredibly warming, comforting, healing soup with freshly extracted juices for extra enzyme activity! I also like to call it Intelligent Soup!
Peel and chop finely two sweet potatoes and start steaming.
Meanwhile, in a large pan, add:
• three tbsp water
• one chopped onion
• six cloves chopped garlic - (I call this wet frying!)
- Then add two cups of small spears of broccoli and one finely chopped courgette.
- 'Fry' for another minute, pushing around the pan all the time with a spoon.
- Next, add 1 pint water with 2 tsp bouillion and bring to a low simmer.
- After 15 mins, add the steamed sweet potato to the soup and bring off the heat completely.
• Add a tbsp paprika
• the juice of one lemon
• a splash of tamari soy sauce (optional),
• a tbsp apple cider vinegar
• a squeeze of honey or agave
• 2 tbsp olive oil...
And now for the best part!
The FRESHLY extracted juice of:
• five large carrots
• one courgette
• two inches of ginger
• two sticks celery
Mix altogether and blend, either in batches in your blender (please take care if it's hot) or with a hand blender, and serve immediately.
This is an incredible soup - warming, comforting, and full of live nutrition! Notice that I add the oil at the end - heat can really alter the molecular structure of oil, particularly olive oil (coconut oil is ok with heat) - If you want it thicker, add more veggies - you can also throw in any raw veggies you want and heat it on a LOOOWW heat if you want it warmer!
