Recipes - Peanut Butter Oaty Cookies

Do you fancy making a batch of cookies? Well, it's time to get the dehydrator on again as we're going to make the most delicious cookie... and it's fresh from the Sweet Angel Cake Un-Bakery!

For a batch of approx 30 bite-sized cookies, you will need:

1 cup oat flour (grind one cup of oats into a flour - I do this in my high-speed blender but you can you do this in a coffee/flour mill)

1 cup raw nut flour (I used mixed nuts  - choose any!)

4 tbsp peanut butter (or any nut butter of your choice)

3 tbsp honey

3 tbsp lucuma*

3 tbsp mesquite*

* If you're wondering what on earth these ingredients are, go to www.detoxyourworld.com and have a look - the lucuma is a wonderful sweetener, a fruit from Peru - and the mesquite, (which is sold as a non-food but which I still use in my cookies) is the ground up pods from the mesquite tree, which hails from South America.

Mix the mixture well, adding water until you get a ball of dough (firm, not sticky)

Roll it out and cut into any shapes you like.

Pop in the dehydrator for 12  -24 hours (you could bake these at a low temp in the oven for ten to fifteen minutes)

When we made this batch, my daughter raided the dehydrator before they were even 'done'! She loves them!
